For the Hen:

  • 1 (4-5 pound) rooster, butterflied
  • 4 tablespoons ghee, at room temperature
  • 23 tablespoons recent thyme
  • 1 1/2 teaspoons Celtic sea salt, divided
  • 1/4 teaspoon freshly floor black pepper

For the Onions:

  • 2 giant pink onions, minimize into wedges
